Peanut Butter Laksa: The 25-Minute One-Wok Wonder

Coconut cream, a spoonful of peanut butter, and a handful of spices — simmered into a broth that tastes like way more effort than it is. One wok, 25 minutes, done.

Pick your protein - Seafood, beef, chicken, or pork all work here. Sear it first, set it aside, and stir it back in at the end.

Ingredients:


  • 200–300g protein of choice (seafood, beef, chicken, or pork)
  • 2 tbsp olive oil
  • 1 brown onion, diced
  • 2 garlic cloves, finely diced
  • 1 tin coconut cream (400ml)
  • 2 tbsp peanut butter
  • 1 tbsp curry powder
  • 1 tbsp soy sauce
  • 1 tbsp stock powder (or 2 stock cubes)
  • 4–6 cups water
  • Pad Thai noodles
  • 1 bunch bok choy
  • Fresh lime juice and coriander, to serve



Steps:


1. Heat the Cobb wok accessory over medium heat. Add oil, onion, and sliced protein. Cook 3–5 minutes until done, then set aside.


2. Add garlic, peanut butter, soy sauce, and coconut cream. Stir until combined.


3. Add curry powder, stock powder, and water. Season, lid on, simmer gently for a few minutes.


4. Add noodles and cook 3 minutes, until almost done.


5. Stir the bok choy and protein back in.


6. Serve with lime and coriander.

Best enjoyed somewhere outdoors with a sunset view!
