Fresh fish, butter, lime and chilli. 


Good food doesn’t need to be complicated! 

We’d just wrapped up a stunning hike on Hinchinbrook Island, climbing up to Zoe Falls for a swim in cool, fresh water. Once back at the boat, we eased out into the middle of the bay to soak up the view of those dramatic tropical mountains that make the island so iconic. With the afternoon light settling in, we were getting hungry and it felt like the perfect moment for a simple cook-up. We fired up the COBB Grill and cooked some fresh coral trout we’d caughtthe day before. Sometimes the simplest food really is the best, and it does not get simplerthan this.

Ingredients:


  • Fresh coral trout

  • Butter

  • Wraps

  • Lime

  • Mayonnaise

  • Fresh chilli or chilli flakes

  • Fresh coriander

  • Salt & pepper

Steps:


1. Prep the fish Fillet the coral trout and cut into good-sized cubes.


2. Cook Heat the COBB frying pan and add a generous amount of butter. Fry the fish over high heatuntil mostly cooked through.


3. Finish with lime Squeeze fresh lime juice over the fish and season with salt and pepper.


4. Assemble Spread mayo onto a wrap, add the hot coral trout, then finish with fresh chilli and coriander.

Sometimes the simplest food is the best.
